Ingredients:
- Mochiko flour - 1 cup
- White sugar - 3/4 cup
- Egg - 1
- Coconut milk - 3/4 cup
- Pure vanilla extract - 1/2 tsp
- Matcha green tea powder - 11/2 tsp
- Butter - 2 TBSP melted
- Icing sugar - For dusting
Instructions:
This recipe makes a very small portion about 10 squares. You can double the recipe and then use a 8X8 pan.
Preheat oven to 350 degrees F. Prepare a 4 X 8 pan with parchment paper.
Mix all the dry ingredients, put the Mochiko flour, sugar, and matcha powder in a bowl and mix well.
Add the eggs, coconut milk, pure vanilla extract and butter and mix until well incorporated.
Pour into the pan and bake for 30-40 minutes. Allow for the cake to cool completely before cutting into squares. Dust with icing sugar just before serving. If you really like the taste of green tea then you can dust a bit on top of the icing sugar.
