Mouth watering raspberry ice-cream to make your day pleasant.

Kids just love ice cream so previous Saturday evening i gave a try to this delicious Raspberry ripple ice cream.

In the afternoon i made sure everything was ready to prepare this delicious mouth watering recipe.

Lets start

Serves : 5 people

Ingredients:

2 1/2 cup fresh frozen raspberries. thawed if frozen, plus extra to serve 1.67 tbsp water 1.67 eggs 0.83 tbsp superfine sugar 9 1/6 cups milk warmed 0.83 tsp vanilla extract 9 1/6 cups heavy cream

Instructions:

1) Turn the freezer to rapid. Put the raspberries into a pan with the water and bring to a boil, then reduce the heat and let simmer gently for 5 minutes. Remove from the heat and let cool for 30 minutes. Transfer to a food processor or blender and process to a puree, then rub through a nylon strainer to remove the pips. Set aside

2) Beat the eggs in a bowl. Stir the sugar the warmed milk, then slowly pour onto eggs, beating constantly. Strain into a pan and cook over low heat, stirring constantly, for 8-10 minutes, or until the custard thickens and coats the back of wooden spoon. Add the vanilla extract, remove from the heat, and let cool.

3) Half-whip the cream in a large bowl, then slowly stir in the cooled custard. Pour into a freezerproof container and freeze for one and half hours, or until starting to set around the outside. Remove from the freezer and stir the mixture, breaking up any ice crystals.

4) Return the mixture to the freezer and freeze for an additional hour, then remove from the freezer again and gently stir in the raspberry puree to give a rippled effect. Return to the freezer for an additional hour or until frozen. Serve in scoops with extra fresh raspberries.

The end result was a reddish mouth watering ice cream and the kids at home just couldn't resist to go for it.
