INGREDIENTS
1 tbsp olive oil
1 garlic clove, peeled and crushed
1 yellow / brown onion, cut in half and finely sliced
500g / 17oz mushrooms
¼ tsp salt
¼ tsp chilli powder
1 tbsp thyme
1 tbsp rosemary
½ cup stock
1 tsp all purpose flour
INSTRUCTIONS
Heat the olive oil in a large frying pan.
Add the onion and garlic and sauté for 5 minutes.
Add the mushroom and sauté for 10 minutes.
Add the stock, spices, thyme and rosemary and bring to a simmer, simmer for 5 minutes.
In a small bowl whisk together the flour and 1 tbsp of water until all clumps are gone.
Add the flour to the mushroom mixture and mix well.
Serve the mushroom stew over rice, couscous or any other grain.
