Hi guys, I think I need your help...
So where I live (central Europe) there is this restaurant that has an amazing dessert that I would like to recreate but have no idea how.
Basically the whole thing is baked in a deep oval ramekin, at the bottom there are two crepes filled with chocolate and banana (or any other filling of your choice). And over the crepes there is almost an inch of some sort of custard. I don't even know if I should call it custard because it is really light (as you can see in the pictures). It is not overly sweet either, I would actually say that it is not sweet at all but there is still probably some sugar in there. I would say it takes at least 20 minutes to bake (judging by how long we wait every time we order it).
I really don't know what else to say about it. I've been checking various recipe websites for something similar but it seems that every custard/batter recipe I find is too dense or gets a sponge-like consistency when baked.
So please take a look at the pictures and the short video I provided, any input is deeply appreciated.
(please excuse the possible missuse of culinary words, english is my second language)
bon appetit
