OMG! I love poached eggs, but this recipe takes them to the next level. I just finished a couple of these beauties with some toast.
Ingredients:
- poached eggs
- 1/2 cup yogurt
- 1 tsp paprika (I used sweet)
- 1/2 tbsp butter
- mint flakes
- 1 clove of garlic, minced (optional)
Directions:
- Poach the eggs using your preferred method (I use Heston Blumenthal's).
- When done take them to a plate with a slotted spoon.
- Mix yogurt with garlic and pour it on top of the eggs.
- Heat butter on a skillet, when it sizzles add papikra, remove from heat and stir well until cooked (30/45 secs).
- Pour the butter-papikra mix over the eggs/yogurt.
- Sprinkle some dried mint.
- Enjoy!
