Turkish Poached Eggs with Yogurt and Papikra

OMG! I love poached eggs, but this recipe takes them to the next level. I just finished a couple of these beauties with some toast.

Ingredients:

  • poached eggs
  • 1/2 cup yogurt
  • 1 tsp paprika (I used sweet)
  • 1/2 tbsp butter
  • mint flakes
  • 1 clove of garlic, minced (optional)

Directions:

  • Poach the eggs using your preferred method (I use Heston Blumenthal's).
  • When done take them to a plate with a slotted spoon.
  • Mix yogurt with garlic and pour it on top of the eggs.
  • Heat butter on a skillet, when it sizzles add papikra, remove from heat and stir well until cooked (30/45 secs).
  • Pour the butter-papikra mix over the eggs/yogurt.
  • Sprinkle some dried mint.
  • Enjoy!
