Chinese Tea Eggs Recipe (Cha Ye Dan)

Ingredients

  • 6 eggs

  • 1tbsp loose black tea

  • 1tbsp light soy sauce

  • 1tbsp dark soy sauce

  • 1tbsp sugar

  • 3 star anises

  • 1 cinnamon stick

  • 3 slices of ginger

  • 1/2 teaspoon salt

Instructions

  • Place eggs in a saucepan with cold water and bring to the boil over a medium-high flame. Cover, remove from heat, and set aside for 10 minutes

  • Remove from the pan (but keep the water) and cool under cold water. Use a spoon to carefully crack the shells evenly all over the eggs

  • Put the eggs back in the pan in the same water, along with the rest of the ingredients. Bring to boil then simmer for an hour

  • Take the pan away from the heat and leave the eggs to soak for another hour

  • Take out the water, peel off the shells (or leave them on if you wish) and serve
