Full recipe on Feeding Fen
Ingredients

6 eggs

1tbsp loose black tea

1tbsp light soy sauce

1tbsp dark soy sauce

1tbsp sugar
-
3 star anises
-
1 cinnamon stick
-
3 slices of ginger

1/2 teaspoon salt
Instructions
-
Place eggs in a saucepan with cold water and bring to the boil over a medium-high flame. Cover, remove from heat, and set aside for 10 minutes

Remove from the pan (but keep the water) and cool under cold water. Use a spoon to carefully crack the shells evenly all over the eggs

Put the eggs back in the pan in the same water, along with the rest of the ingredients. Bring to boil then simmer for an hour

Take the pan away from the heat and leave the eggs to soak for another hour

Take out the water, peel off the shells (or leave them on if you wish) and serve
