Ingredients:
- 4 large potatoes, cubed
- 1/2 medium onion, chopped
- 1 green onion, chopped
- 1/2 cup parsley, chopped
- 6 slices bacon, cooked and chopped
- 4 tablespoons butter
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 cup cheese, shredded
Directions:
- In a skillet, begin to cook the bacon on medium heat until crispy, about 15 minutes.
- Meanwhile, cut the potatoes, onion, and green onion. Mince the parsley.
- Once the bacon is cooked, remove and place on paper towel- once cooled, crumble.
- In a separate skillet, melt the butter on medium heat.
- Toss in the potatoes, onion, salt, and black pepper, combine ingredients.
- Cook for 10 minutes on medium heat, continue to stir.
- Add the bacon and green onions. Cook for 5 minutes.
- Add cheese and parsley, stir ingredients and cook for 3 minutes.
- Serve as a delicious side at dinner or with eggs for a hearty breakfast dish.
