Hearty Skillet Potatoes

Enjoy as a side at dinner or serve with eggs for a hearty breakfast dish.

Ingredients:

  • 4 large potatoes, cubed
  • 1/2 medium onion, chopped
  • 1 green onion, chopped
  • 1/2 cup parsley, chopped
  • 6 slices bacon, cooked and chopped
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup cheese, shredded

Directions:

  1. In a skillet, begin to cook the bacon on medium heat until crispy, about 15 minutes.
  2. Meanwhile, cut the potatoes, onion, and green onion. Mince the parsley.
  3. Once the bacon is cooked, remove and place on paper towel- once cooled, crumble.
  4. In a separate skillet, melt the butter on medium heat.
  5. Toss in the potatoes, onion, salt, and black pepper, combine ingredients.
  6. Cook for 10 minutes on medium heat, continue to stir.
  7. Add the bacon and green onions. Cook for 5 minutes.
  8. Add cheese and parsley, stir ingredients and cook for 3 minutes.
  9. Serve as a delicious side at dinner or with eggs for a hearty breakfast dish.
