These cornbread waffles are perfect with some BBQ or as a hearty breakfast alongside some eggs and bacon.
Ingredients:
- 1 cup cornmeal
- 8 ounces corn kernels
- 1 1/2 cups all-purpose flour
- 1 2/3 cups milk
- 6 tablespoons butter, melted
- 2 large eggs
- 3 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
Directions:
- Prepare your waffle iron to the highest temperature.
- In a large bowl, stir together all ingredients until combined.
- Once heated, spray waffle iron with non-stick spray.
- Pour 2/3 cup batter onto skillet and cook for 2-3 minutes.
- Serve hot and enjoy!
