Cornbread Waffles

These cornbread waffles are perfect with some BBQ or as a hearty breakfast alongside some eggs and bacon.

Ingredients:

  • 1 cup cornmeal
  • 8 ounces corn kernels
  • 1 1/2 cups all-purpose flour
  • 1 2/3 cups milk
  • 6 tablespoons butter, melted
  • 2 large eggs
  • 3 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Directions:

  1. Prepare your waffle iron to the highest temperature.
  2. In a large bowl, stir together all ingredients until combined.
  3. Once heated, spray waffle iron with non-stick spray.
  4. Pour 2/3 cup batter onto skillet and cook for 2-3 minutes.
  5. Serve hot and enjoy!
