Help altering a pumpkin bread recipe.

I was given this pumpkin bread recipe to make for Christmas this year and upon trying it last week I noticed it tasted very unusual. I absolutely love pumpkin bread, it's one of the few sweeter baked goods I'll actually eat and have made it before with other recipes. This one though just doesn't taste right to me. There honestly isn't much of a pumpkin flavor to it and it isn't as sweet as other recipes I've made before, but it does leave an unusual aftertaste for me.

Upon googling other recipes I noticed one drastic difference is that it uses shortening instead of oil which every other recipe I found used. I'm not sure if this is the cause for it tasting so off to me but I'm posting the recipe here to hopefully get advice on what to change.

  • 2/3 CUP SHORTING
  • 1/2 teaspoon BAKING POWDER
  • 3 CUPS SUGAR
  • 2 teaspoons BAKING SODA [mixed with a little water to be a thin paste]
  • 4 EGGS, SLIGHTLY BEATEN
  • 1/2 teaspoon CLOVES
  • 1 small CAN OF PUMPKIN
  • 1 1/2 teaspoon CINNAMON
  • 2/3 CUP WATER
  • 3 1/2 CUPS FLOUR
  • 1/4 teaspoon GROUND GINGER

PUT SHORTING, SUGAR , BEATEN EGGS, AND PUMPKIN IN A LARGE BOWL AND BEAT WELL [I use a mixer, but large bowl and muscle power will do] ADD WATER AND BAKING SODA. MIX WELL.

MIX DRY INGREDIENTS TOGETHER [flour,baking powder and spices] AND BLEND INTO 1-ST MIXTURE.

GREASE AND FLOUR 2 LARGE LOAF PANS AND POUR BATTER INTO THEM. SPRINKLE TOPS WIT A MIXTURE OF 2 TABLESPOONS SUGAR AND 1/2 teaspoon CINNAMON BEFORE BAKING.

BAKE IN A 350 DEGREE OVEN FOR ABOUT 1 HOUR
