What can I do with liquid left over after boiling ginger?

I used this recipe to candy a bunch of ginger today. After boiling the ginger, it's strained and only 1/4 cup of the liquid is used for the actual candying part. I saved all the extra liquid in the hopes that I can do something else with it since it's pretty nicely flavored with ginger (and unsweetened). Any ideas?
