Hey guys! looking for a kosher marshmallow recipe..

I'm currently making some Kosher marshmallows for a friend's Christmas present, she was complaining to me about how hard it is to find it and how she has to wait for friends from Israel to come bring some to the states. So i decided that this christmas I'd make her some kosher marshmallows!

I was wondering if i could use Agar Agar in lieu of regular gelatin, would it affect the final product at all or should I be okay? Would I have to do something different during the process or treat it like I would normally treat marshmallows?
