Homemade Chocolate Yule Log

  • Ingredients
  • 10 Eggs - Separated
  • 2 C Powdered Sugar
  • 8 Tbsp Cocoa
  • 1/2 C Flour
  • 2 tsp Vanilla
  • Pinch of Salt
  • Topping
  • 12 oz Dark Chocolate
  • 1/4 C Unsalted Butter
  • Instructions
  • 1. Preheat oven to 375°
  • 2. Get 3 bowls. In one bowl sift the powdered sugar, flour, cocoa, and salt.
  • 4. In the other two separate the egg whites and egg yolks
  • 5. On med speed mix egg whites until stiff peaks form, place in refrigerator
  • 6. Mix egg yolks on med speed for about one minute then start to add your dry ingredients little by little. Once they are fully incorporated fold in your egg whites
  • 7. Spray a 1/2 sheet or jelly roll pan generously with release spray, place parchment paper on top of pan leaving about a 1" lip then spray with more release spray
  • 8. Pour batter into pan
  • 9. Bake at 375° for 12-15 minutes
  • 10. Spread a dish towel onto table and place powdered sugar on top
  • 11. Once cake is done cool for 5 minutes, flip cake onto towel and roll cake into towel
  • 12. Cool cake completely, Roll cake out and ice with frosting, roll cake back up without towel
  • 13. Over a double boiler or in microwave melt 12oz and 1/4 C unsalted butter. Don't melt until it's runny just until it's spreadable.
  • 14. Spread over top of roll
