- Ingredients
- 10 Eggs - Separated
- 2 C Powdered Sugar
- 8 Tbsp Cocoa
- 1/2 C Flour
- 2 tsp Vanilla
- Pinch of Salt
- Topping
- 12 oz Dark Chocolate
- 1/4 C Unsalted Butter
- Instructions
- 1. Preheat oven to 375°
- 2. Get 3 bowls. In one bowl sift the powdered sugar, flour, cocoa, and salt.
- 4. In the other two separate the egg whites and egg yolks
- 5. On med speed mix egg whites until stiff peaks form, place in refrigerator
- 6. Mix egg yolks on med speed for about one minute then start to add your dry ingredients little by little. Once they are fully incorporated fold in your egg whites
- 7. Spray a 1/2 sheet or jelly roll pan generously with release spray, place parchment paper on top of pan leaving about a 1" lip then spray with more release spray
- 8. Pour batter into pan
- 9. Bake at 375° for 12-15 minutes
- 10. Spread a dish towel onto table and place powdered sugar on top
- 11. Once cake is done cool for 5 minutes, flip cake onto towel and roll cake into towel
- 12. Cool cake completely, Roll cake out and ice with frosting, roll cake back up without towel
- 13. Over a double boiler or in microwave melt 12oz and 1/4 C unsalted butter. Don't melt until it's runny just until it's spreadable.
- 14. Spread over top of roll
