This burrito casserole is actually super delicious and it's also HEALTHY! Only 350 calories per serving and very little carbs. I'm totally obsessed with Mexican food but had to cut back on the heavy burritos/nachos/quesadillas/etc. With this recipe I found I got the same satisfaction, without the guilt.
