Cauliflower Pie with Bacon and Jalapeño - Comfort Food

CAULIFLOWER PIE WITH BACON AND JALAPENO

This recipe is made with almond flour because it was intended to be gluten free, but you could use regular flour instead if gluten is not a concern.

Ingredients:
- 2 Tbsp of preferred cooking fat (I used avocado oil)
- 5 cups of cauliflower florets, chopped small
- 2 cups of pre-cut cole slaw mix (in the salad section of the market - or shredded cabbage and carrots)
- 2 eggs, lightly beaten
- 4 slices of bacon, cooked and chopped
- 1/2 cup almond flour
- 1 jalapeño, chopped (I kept the seeds to give it heat)
- Sea salt to taste
- Ground black pepper to taste
- 2 tbsp of parsley for garnish (optional)

Directions:
1. Preheat the oven to 400ºF.
2. Cook the cauliflower in a heated skillet with cooking fat over medium-high heat for 5 Minutes and then add cabbage and continue to cook for an additional 5 Minutes until the cauliflower starts to lightly brown.
3. Season with salt and pepper to taste. (do not add too much salt because the bacon will add a lot of salty flavor.)
4. Remove from heat, let cool for a couple of minutes and stir in the eggs, almond flour, bacon, and jalapeño until completely mixed.
5. Divide the mixture into personal sized baking dishes, or into one pie dish.
6. Bake the pies for 30-40 Minutes until the top is golden brown and crispy looking.
7. Add optional chopped parsley for garnish.
