Help! I'm really low on time to cook, but am trying to eat a lot of protein. Does anyone have any good, bulk recipes that make good leftovers that are high in protein?

Been really busy with work and school over the last few months. Normally I love to cook and get a few decent, from scratch meals in every week, but lately I just don't have the time.

That said, I lost a lot of weight due to my pancreas crapping out few years ago and just recently have gotten serious about putting it back on. This has meant spending what little time I have left on my hands in the gym, and my goal is to eat 100-150g of protein in every day.

I just don't have the time to cook that much good food, so I've fallen back on cooking the same crockpot mexican shredded chicken 3 out of the last 6 weeks because I can use it in hard/soft tacos and tostadas, burritos, salads, salads, and even sandwiches in a pinch so I don't always totally feel like I'm eating the same thing over and over. It also makes a ton of leftovers so I can get almost a weeks worth of high protein food without spending much time cooking.

That said, I had an amazing Valentine's day dinner and am almost depressed at the thought of going home and making another chicken taco salad. If anyone has any good recipes to cook up a ton of meat in a hurry, especially if it makes for versatile leftovers, I'd love to hear from you!
