this recipe sounded eccentric so I thought I'd try it out (yes, you can taste the apple but it's just the right amount):
INGREDIENTS:
- 7 oz pork, sliced
- 2 oz vegetable coulis
- 1 cup zucchini, sliced
- 1 cup cauliflower, blanched
- 2 tsp apple butter
- 1 tbsp pickled ginger
- 1 lime, juiced
- ¼ tsp grape seed oil
- sea salt & pepper, to taste
DIRECTIONS:
- In a hot non-stick pan, add oil, pork, sea salt, pepper, zucchini, vegetable coulis, lime juice, apple butter, and pickled ginger; mix together.
- When everything is cooked, add the cauliflower.
