Pork Strips w/Apple Jelly Glaze

this recipe sounded eccentric so I thought I'd try it out (yes, you can taste the apple but it's just the right amount):

INGREDIENTS:

  • 7 oz pork, sliced
  • 2 oz vegetable coulis
  • 1 cup zucchini, sliced
  • 1 cup cauliflower, blanched
  • 2 tsp apple butter
  • 1 tbsp pickled ginger
  • 1 lime, juiced
  • ¼ tsp grape seed oil
  • sea salt & pepper, to taste

DIRECTIONS:

  • In a hot non-stick pan, add oil, pork, sea salt, pepper, zucchini, vegetable coulis, lime juice, apple butter, and pickled ginger; mix together.
  • When everything is cooked, add the cauliflower.
