Thai fish burgers

Ingredients Thai fish burgers

• 500 gwhite fish fillets, chopped • 2 tbspred curry paste • 2 tbspchopped coriander leaves • 1 tbspwoolworths select canola oil • 4bread rolls, split • 1/4 cupwoolworths thai sweet chilli sauce, plus extra to serve • snow pea sprouts, cucumber ribbons, spring onion curls, to serve

Steps Thai fish burgers 1. Line an oven tray with baking paper. 2. In a food processor, combine fish and curry paste. Pulse to a coarse paste. 3. Transfer to a bowl. Stir coriander through. Use damp hands to shape into four large, even-sized, flattened patties. Place on tray. Chill for 10 minutes. 4. In a non-stick frying pan, heat oil on medium. Cook patties for 3-4 minutes on each side until golden. Remove and drain on paper towel. 5. Top roll bases with sweet chilli sauce, snow pea sprouts, cucumber, pattie, spring onion and an extra drizzle of sweet chilli sauce. Top with roll lid. Serve.

Tips Buns can be toasted, if you prefer.
